How To Make Jalapeño Bacon Wrapped Poppers

My family absolutely enjoys growing tons of jalapeños in our garden.  We like pickling them, making cha-cha and adding them as flavor enhancers to various dishes.  However, one of our most favorite ways of consuming them is by making jalapeño bacon wrapped poppers!  Oh my goodness these are so delicious! They serve as a great snack, party favor, or potluck hit!

How to Prep your Jalapeño Bacon Wrapped Poppers

* When working with jalapenos always wear gloves and avoid touching your eyes, mouth and nose.

Step 1: Put on Gloves.  Do this before you touch your peppers.

Step 2: Rinse under cool water.

Step 3: Slice the jalapenos vertical or lengthwise

Step 4: Take a spoon and scrape out the seeds and membrane

Step 5: Do not take off gloves, rinse and continue preparations

Required Ingredients for Filling Jalapenos

Cheeses: You’ll need at least two types, cheddar cheese and as a base cream cheese.  You can get creative and add monterey, colby, or mozzarella, etc.  The key is to have your cream cheese at room temperature or to warm it in the microwave for at least 30 seconds so that it is able to be stirred. 

On the condition that you’re in a hurry, you can use pre-shredded cheese. However, I like to take the extra effort and freshly grate  my cheese.  It just tastes so much better and doesn’t include the additives required to preserve pre-shredded cheeses. I use a simple cheese grater to accomplish this. I often pre-shred at the beginning of the week, If I know I’m going to be using a lot for various dishes.

Once your cream cheese is at room temperature and your cheese is shredded you’re going to combine them into one mixture and set aside.

Bacon: Now this is where a lot of your flavor is going to come from, so use your favorite type of bacon for this. I love a nice thick hickory smoked or applewood smoked bacon.  Make sure to allot for one slice per jalapeno half. In other words, if you have a total of twelve jalapeno slices then, you’ll need twelve slices of bacon.

How to cook the Jalapeno Poppers

Once all of your ingredients are prepped the process is pretty easy. Remember: KEEP YOUR GLOVES ON.  I cannot stress how important it is to NOT touch your eyes, nose or mouth when handling these peppers.  Should you accidentally touch your eyes, mouth, or nose while handling, it’s okay, just immediately flush those areas with streaming cool water.

With your gloves still on, take a sliced jalapeno and spoon fill it with the cheese mixture.  Proceed to wrap around the pepper with one slice of bacon.  Place on a lined baking sheet. I prefer to use parchment paper , but you can absolutely use aluminum foil . Continue with the next slice until all peppers are stuffed and wrapped.

Place the baking pan in the oven until bacon is cooked (bacon should not look raw or soft). For crispy bacon, for the last 3 to 5 minutes, place the oven on broil. Remove and allow to cool on a paper towel lined dish for 5 minutes and enjoy! Trust me your family and friends will not be able to stop at just one!

Bacon Jalapeno Pepper Poppers

Ingredients
  

  • 16 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 12 jalapeno peppers, halved lengthwise, seeds and membrandes removed.
  • 24 slices of bacon

Instructions
 

  • Preheat oven to 375 F (190 degrees C). Line a baking sheet with aluminum foil.
  • Mix cream cheese and cheddar cheese together in a bowl until evenly blended.
  • Fill each half of a pepper with the cheese mixture and wrap each stuffed pepper with a slice of bacon.
  • Arrange bacon-wrapped peppers on the prepared baking sheet.
  • Bake in the oven until bacon is cripsy, approximately 20 minutes.

Notes

Bonus Tips:
Toothpicks can be used to keep the bacon wrap in place, as the bacon will uncurl as it cooks.
You can make these as spicy or as mild as you like.  The trick is in the membrane.  The more you carve out, the milder the spice level.  The more you leave? The spicer it is!
If you want the cheese to glide off the pan, try swapping out aluminum foil for parchment paper.
You can also bake these on a cooling rack and use an aluminum lined pan underneath to serve as a drip pan.
Bacon not as crispy as you like? Broil them in the oven for 5 minutes.
Want to skip the kitchen?  No problem! These cook great on the grill as well!
